Agouroleio, αγουρέλαιο

The name “Agouroeleo” of the early harvest green olive oil comes from the Greek word “Agourélaio” (Greek: αγουρέλαιο) from ágouros = unripe and élaio = oil.

The oil must not be [over]heated otherwise it damages its rich nutrients. Excellent, however, to be used in salad dressings, and for infusion with herbs, to be used in massage oils, body oils, etc.

Agouroleo is an olive oil produced relatively early in the harvest season, before the olive fruit ripens, which is still unripe and green. The olives are harvested by hand in mid-October and processed the same day or the following day at the latest.

Agouroleo olive oil has a bright green color thanks to the chlorophylls of the unripe fruit, which give it greater antioxidant properties. It differs in flavour from Extra Virgin olive oil in that it is strongly bitter and slightly spicy, with a strong fruity flavour due to the aromas of freshly picked, unripe Agouroleo olives.

Agouroleo keeps its strong flavour for several months. The powerful flavour can only be guaranteed during production, in November and through March. As time passes, Agouroleo loses its intense flavour, but not its nutrients. It contains all the vitamins and provitamins of olive oil, minerals, and polyphenols, which protect cells from oxidative stress, active oxygen, and free radicals.
